Lemon Pop Cake

Here is a delicious recipe that can be made so easily and taste very similar to our favorite traditional family recipe. We substituted diet pop for the regular pop and eliminated all of the margarine and eggs. Please note for the same size slice of cake you save 300 calories, 38 g carbohydrate, and 17 g fat per each and every individual serving you eat. You may want to add fresh fruit in season and light whipped topping. Enjoy !!!!

Original Recipe Recipe Makeover 

1 ½ cups of margarine (sticks)
¾ cup 7-UP
3 cups granulated sugar
5 eggs
3 cups flour
2 Tbsp lemon extract

1 pkg lemon supreme cake mix
12 oz diet lemon lime soda pop

  • Mix sugar and margarine, add eggs, flour, lemon extract, 7-up and mix well.
  • Preheat oven to 350 degrees.
  • Spray bundt pan with non-stick cooking spray.  Lightly flour pan and pour batter into pan.
  • Bake at 350 degrees for 1 to 1¼ hours
  • Mix all ingredients.
  • Preheat oven to 350 degrees.
  • Spray bundt pan with non-stick cooking spray.  Lightly flour pan and pour batter into pan.
  • Bake according to package directions.
